Cookies, cake, and pie are all tasty desserts. But sometimes, nothing hits the spot like a simple piece of rich, dark chocolate.

Most candy bars are made with milk chocolate, which is sweeter and less bitter than dark chocolate. Some people only like milk chocolate. For others, it has to be dark or it doesn’t count. Find out if Amy and Jason are chocoholics.

Amy:  I’m just dying for some chocolate, Jason. You don’t have any, do you?

Jason:  No. Don’t carry chocolate in my pockets or anything.

Amy:  I just like to have a little bit of chocolate every day.

Jason:  Wow, really? So it’s almost like coffee to you or something?

Amy:  It’s similar to coffee. I don’t need it to wake up, but it is kind of a pick me up in the afternoon. Just like a square or two of really dark, creamy, delicious chocolate.

Jason:  What percentage cacao are you going for here?

Amy:  I like to go, you know, 70% or higher.

Jason:  Alright.

Amy:  Yeah. But it also has to be creamy. I don’t like it when it’s so dark that it has that kind of brittle texture.

Jason:  And you want just the chocolate. You don’t want it in a chocolate bar with nuts and raisins and different things?

Amy:  I do not like nuts in chocolate. But sometimes a little something, like lately, I’ve been seeing a lot of chocolate with salt.

Jason:  Oh yeah, that actually is really good.

Amy:  It’s so good, I know.

Jason:  It’s so surprising.

Amy:  I know. But it really brings out that chocolate flavor.

Jason:  Hot chocolate, does that do the trick in the winter?

Amy:  Yeah, but it has to be that really dense, thick, dark hot chocolate.

Jason:  I like a good milk chocolate. You can kind of suck on it and dissolve it in your mouth. It’s nice.

Amy:  Yeah, it’s just kind of a different thing. It doesn’t give me that sort of high that real dark chocolate gives me.

Jason:  Wow. I’m not familiar with the dark chocolate feeling.

Amy:  You don’t get kind of a buzz when you eat a piece of dark chocolate?

Jason:  I’ll have to pay more attention.

Do you have a favorite kind of chocolate chips?

I use this chocolate for most of my melted chocolate needs because it melts smoother than chocolate chips. There are no stabilizers in it, so I don’t have to “finesse it” to get it to melt. None of that in and out of the microwave seven times, stirring in between each 20-second burst and hoping it doesn’t scorch monkey business.

For my day-to-day baking that calls for in tact chocolate chips, I use Trader Joe’s semisweet chocolate chips (and stock up on their white baking chips before Christmas since they’re seasonal at my store).

Because I shop for many of my baking supplies based on price, if I didn’t have access to a Trader Joe’s, I would probably use Ralph’s grocery store-brand semi-sweet or Nestle Tollhouse semi-sweet morsels.

I don’t splurge on more expensive chocolate chips like Ghirardelli or Scharffen Berger or fancier chocolate chunks for the “everyday” goodies that I make for my family. I reserve that kind of chocolate for extra-special baking occasions.

Chocolate Hazelnut Breakfast Smoothie – Diet, Dessert and Dogs

I know I promised a final installment to the Dole Summit recaps (and I’ll be posting that one next), but I just had to share this amazing smoothie that I guzzled created this morning!

After spending the past three days with a miserable cold (damn you, recirculated airline air), I woke up today feeling marginally better and craving something substantial–but also comforting. This drink hit the mark perfectly, since it combines a few of my very favorite things: breakfast; chocolate; my VitaMix; quick; and easy. I mean, with a quintet like that, how can you go wrong?**  For me, it’s just what the doctor naturopath ordered.

I adapted this recipe from one I came across in Ladies Home Journal magazine (May 2012 issue).  I loved the concept of a mocha/nutella mix, but wasn’t crazy about the 305 calories, 15 grams (!) of fat, 6 grams of fiber and only 7 grams of protein in each serving.

My version replaces banana with pear (and if you can do banana, please feel free); coffee with Dandy blend; and nutella with the base ingredients of hazelnuts and raw cacao. I also used some chocolate rice protein powder to increase the nutritional content.

This low glycemic, dairy-free and whole foods version clocks in at 275 calories per serving, with 11.5 grams of fat, 12 grams of fiber and 12.5 grams of protein. I’d say that’s an improvement. . . and it seems to have given the boot to my cold today, too.  Way better than a musical serenade, any time.

** Actually, there is one quintet I’d rather be greeted with in the morning (which we heard live a few years ago). But giventhat  the HH was born without a “romance gene,” I’d say there’s no chance he’ll be arranging a private concert for me any time soon.

Drinking Chocolate Milk May Help Your Workout | FYI BeHealthy

July 1, 2011 — Drinking low-fat chocolate milk after a workout helps endurance, builds muscle, reduces fat, and seems to improve performance, according to new research.

The drink seems to have the right combination of carbohydrates and protein, says researcher John L. Ivy, PhD, department chair of kinesiology and health education at the University of Texas at Austin.

“When recovering from exercise, two things you want to do is replenish sugar stores in the muscle and turn on protein synthesis and stop protein breakdown,” Ivy tells WebMD.

“The combination of carbohydrate and protein [found in chocolate milk] work synergistically to do those two things,” he tells WebMD.

The low-fat chocolate milk beat out two other drinks tested — a no-calorie beverage and a carbohydrate drink with no protein.

Ivy’s research is published in the Journal of Strength and Conditioning Research and the Journal ofNutrition and Metabolism. He also presented the findings at the American College of Sports Medicine Meeting in Denver in June.

The research was funded by the National Dairy Council and the National Fluid Milk Processor Promotion Board.

Chocolate Milk After Workouts

In one of two studies, Ivy had 10 well-trained cyclists exercise over two hours to the point of fatigue. They then drank either the milk drink, the carb drink, or the no-calorie beverage right after the workout and then two hours later.

After four hours the cyclist did a 40K cycling time trial.

“The individuals, when they had received the chocolate milk, performed the time trials significantly faster,” he says. They shaved six minutes off their time when they drank the chocolate milk compared to the carb drink.

The chocolate milk, he says, activates the proteins that block protein breakdown. This preserves protein and muscle, helping the recovery process.

In a second study, Ivy trained 32 untrained people, having them cycle 60 minutes a day, five days a week, for 4.5 weeks.

He gave one group the chocolate milk right after exercise and one hour later. He gave a second group the carb drink and a third the placebo no-calorie drink.

They looked at maximum oxygen uptake, a measure of aerobic endurance. ”The improvement in maximum oxygen consumption was twice as great [in the milk drinkers] than in the carb or placebo group.”

“We also found individuals receiving the milk tended to have a greater increase in lean body mass and greater reduction in body fat.”

Ivy says he was not trying to do a head-to-head comparison against sports drinks on the market. He says that sports drinks meant for use after workouts typically do contain protein.

The chocolate milk tested, he says, has a better carb-protein mix than white milk. The chocolate milk used has about 11.5 grams of carbohydrates per 100 milliliters, 3.5 grams of protein, and 2 grams of fat. The carbohydrate drink he tested has 15 grams of carbs, 2 grams of fat, and no protein.

Calories Count, Too

Jennifer Schmit, a spokeswoman for Gatorade, did not comment directly on the research. However, she says that a sports recovery drink made by the company does contain protein.

She notes that ”it is important to take in 10-20g of protein within 30 minutes of exercise to start the muscle recovery process, as well as to replenish the carbohydrates and electrolytes lost during the workout.”

The research findings make sense, says Barbara Lewin, RD, a sports nutritionist in Ft. Myers, Fla. She advises athletes on nutrition to improve their performance. She reviewed the findings for WebMD but was not involved in the research.

“I have been using it for a long time,” she says. It’s no surprise, she says, that the chocolate milk beat out the no-calorie beverage and the carbohydrate drink without protein. The inclusion of some protein in a post-workout drink does improve muscle repair and growth, she says.

“This doesn’t mean that protein shakes are the answer because carbohydrate is extremely important in the recovery process and in restoring glycogen (the stored source of energy in the muscles). However, a food that contains a carbohydrate to protein ratio of 4:1 up to 5:1 does give more of an advantage than taking in 100% carbohydrate. This is what makes chocolate milk such an ideal choice. I usually recommend 1% or skim chocolate milk as the fat in the milk does not appear to provide any advantage.”

Lewin advises drinking the chocolate milk within 20 to 30 minutes. Ivy agrees.

How much to drink, she says, depends on how hard you’ve worked out and your weight. She advises drinking about 8 to 16 ounces as a general guide. If you weigh 120 pounds and you’ve done a light workout, keep the calories around 120, she says. If it was a high-intensity workout, the calories can be double your weight, or about 240.

For the average exerciser, Ivy recommends taking in about 50% of the calories you burned during a workout.

Promo was done to introduce to teenagers – our TA – new improved recipe of NUTS bar.

We used an ‘ambush’ strategy. The bait for this ambush was a book “HOW TO ENJOY HARD AND LOW-PAID JOB”, seeded at Universities, cafes and canteens visited by our TA. Actually it is a nightmare for them – “hard and low-paid” job with such a visual. They would do anything to avoid it. That’s why they took the book… And we offered them a simple pleasurable solution on a bookmark – “OR… charge your mind with NUTS”. At that time our promo-squirrel appeared, offering them new improved NUTS bar, which they willingly accepted. Physical jobs are not aspirational today in Russia; an office position is a dream. No teenager wants to work physically – hence one has to be in the University and regularly pass the exams or one can lose everything. So we made our promo during exam period (end of Jan-Feb) and offered them a simple choice: to learn in a hard way “How to enjoy hard and low-paid job” or just “Charge their mind with NUTS”. Overall brand campaign for NUTS resulted in +5% sales for February-March 2012 vs.2011. Core image attribute for NUTS ‘stimulates brain activity’ grew by 3,9%.
